Descriptive associations, not ingredients: nothing is added to the coffee.: Nectarine + Chocolate + Rainier Cherry Mexico Altura comes to us from the southern states of Chiapas & Oaxaca. Here the mountain ranges provide high altitudes & ideal climates for cultivating coffee on farms that average just a few acres in size. With this small-scale production, each producer can carefully manage the picking & sorting of cherries to remove the damaged & under-ripe ones. Each producer also processes coffee with their own micro-mill where the coffee is depulped & fermented for 24 hours & then washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly.. The washed coffee in parchment is dried in the sun on patios before transporting the coffee to a centrally located dry-mill facility where the coffee is hulled & sorted by density & color in preparation for export. There is support for thousands of producers in the region via programs to renovate farms & increase the production of organic fertilizers as well as investments for road improvements & the establishment of local warehouses and dry-mill facilities. Their collective efforts have established superior producer income to better support agricultural practices & an improved livelihood. Mexican Altura coffee beans are considered to be of the best quality. Higher elevations with thinner atmospheres & cooler temperatures mean the plants grow slowly—the result is a denser, richer bean with complex flavours.
