This year's Mataquescuintla offering is from Jose Lima. He's from the same community of producers that we've been buying from for the last 7 years. Anyone who enjoyed Eduardo Donis Oliva's coffee the past few years will love this one. Jose Lima is part of Cafe Colis Resistencia, the group of coffee producing families resisting the silver mine being developed in their region by Pan American Silver. Processing: WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Varietals: Pache San Ramon Grown at 1850m above sea level. Light roastLight roastRoasted just past first crack to preserve origin character: higher acidity, florals, and fruit, lighter body.
