Situated in the Apaneca Ilamatepec Mountain Range, specifically in Calzontes Arriba, the farm's harvest season runs from December to February, with an average altitude ranging from 1,300 to 1,450 metres. In terms of cultural practices, the farm experiences 2-3 flowerings, typically in April and May. The soil is sandy loam, the average temperature is 20°C, and the annual rainfall is approximately 2,300 mm. Native shade and Inga trees provide coverage, while the fertilisation method involves both soil and foliar applications. The Alvarez Family adheres to sustainable production practices based on Rainforest Alliance certification, although they are not officially certified. Processing on the farm follows the natural method, with coffee drying on raised beds for 18 days. The coffee is dry milled at El Borbollon. This particular lot originates from the Kenyan SL-28 variety, cultivated on the slopes of the famous Ilamatepec Volcano in Santa Ana. Seeking to enhance quality and diversify profiles, the Alvarez family planted this exceptional variety using seeds brought from Africa. The coffee was prepared following the high-quality standards of the El Borbollon mill, a family-run operation with over a century of experience in growing and exporting coffee. El Borbollon is renowned for its expertise in producing exemplary coffees, meeting the evolving requirements of buyers worldwide.
