Tastes Like: Violets, Rosehip, Berry Jam Origin: El Paraiso, Cauca, Colombia VarietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. A major driver of cup character alongside origin and process.: GeishaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. Producer: Samuel Diego Bermudez Elevation: 1930 masl Process: Anti-Maceration Gesha Instead of increasing the pressure of the fermentation tank by adding CO2 or Nitrogen, Diego creates a vacuum environment where the pressure of the fermentation tank drops below 1 bar, the atmospheric pressure. With this technique, he aims to get as close as possible to 0 bar pressure, essentially recreating the conditions of space, with no gas, no oxygen available. In this environment, different microbes (yeasts and bacteria) are active, which creates a very unusual cup profile.
