In the Cup A bright and fruity coffee, the extended fermentation (70 hours) results in lush tropical fruit notes that shine through the light caramelization and juicyAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. acidity. The aromatics are reminiscent of ripe passionfruit , balanced by honey-like sweetness and tart hibiscus tea . The Cenicafe-1 varietal yields dense beans that benefit from a longer extraction to pull all of the sweetness out of the grounds and balance the cup. Origin Every year, the Federación Nacional de Cafeteros (FNC) hosts the Best of Cauca auction, inviting producers from throughout the region to submit their coffees for a juried evaluation. Jurors top lots are then auctioned to buyers from around the world. We attended this year's auction and were delighted to submit the winning bid for one of the top lots, grown by Finca Villa Luz's Ana Milena Morena Otero. Otero's son also submitted a top lot for this year's auction. Historically, Cauca has been known more for its coca production than the high-quality specialty coffees that the region's producers grow nowadays. The annual auction is part of the FNC's efforts to refocus the region's farmers on coffee as the main cash crop and to let the world know that coffees from Cauca can rank among the best.
