Now led by third-generation producer Jose Santos Requejo, the farm is dedicated to sustainable, organic-focused farming practices, with rich soils maintained through constant pruning and natural cultivation methods without pesticides or herbicides. This lot is naturally processed, beginning with carefully handpicked cherries selected at peak ripeness. After a 72-hour fermentation, the coffee is slowly dried on raised beds for 40–45 days under carefully controlled conditions, ensuring clarity, sweetness, and complexity in the final cup.
