Proceso Chiroso appears again! This is our second lot, which we allocated for our Monthly Subscribers first. Jorge Rojas grew this coffee on his farm El Proceso, along with his cousin Stiven Vargas. This delicious coffee is juicyAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and tart with plump apricot, berries, and a subtle florality. These are the handful of remaining bags from the March 30 subscription roast, rested and ready to drink! Prodigal requested a low fermentation-time coffee, and Nikolai from Desarrolladores de Cafe worked with Jorge and Stiven to produce this lot. After each harvest day, they brought the coffee down to Jorge's La Roca processing plant in Planadas. After floating to remove defects, they pulped the coffee, let it sit overnight, and washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse.
