Tends to give clean, transparent cups where origin character shows clearly., floated for defect inspection, and then find their place on raised drying tables for 8-15 days, or until the moisture content reaches the desired 11.5%. Crafted with precision, the African raised beds are designed to facilitate optimal air circulation and temperature control, ensuring a consistent and ideal drying process. Regular turning of the cherries prevents damage from over-fermentation or mold growth. Post-drying, the cherries, now at a moisture level of 11.5-12%, are stored in a local warehouse. Further processing, involving color, density, and screen size sorting, takes place before the final milling, preparing them for export.
