This blend is called "El Mirador" or "The Lookout" because every farm in this area has spectacular views. Due to the low rainfall, coffee maturation is very uniform, allowing producers to pick it when it is perfectly ripe with minimal passes. This is one of the reasons why this coffee has a pronounced yet balanced acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw.
