This offering from Fazenda Esperança comes from the section of the farm called “Eucalipto” after the stand of eucalyptus trees marking the border of the farm. While the majority of coffees Bruno produces are dried naturally in fruit, this is a special lot that is pulped beforehand. Before drying, the coffee cherries have their skin removed, exposing the inner fruit and bean for drying. At the same time, the equipment used in the process separates out any underripe, overripe or immature cherries that might have slipped through the cracks and made it to this stage. The result of processing the coffee as a “Pulped NaturalHoney processThe skin is removed but some sticky fruit mucilage is left on during drying. Lands between washed and natural: more sweetness and body than washed, cleaner than natural.” is an extremely balanced coffee that highlights the amazing flavors locked in the bean, rather than the fruit. We don’t source many coffees from Brasil, but then again, the Souza family produces coffees that will make you rethink what Brasilian coffee is really all about.
