David Berrio’s farm, La Casita, is the most remote site we work with in Urrao. The 1.5-hectare (~3.7 acres) farm, more accurately described as a garden, sits at extreme elevation. In the cup we find lively acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it., ripe peach, and berry-like complexity.
