This is a Gesha we selected for its poise. Not because it is loud, but because everything in the cup feels measured: the florals, the citrus, the sweetness, the texture and the finish. David Ruben Gomez has produced a coffee with rare balance — juicy, viscous and remarkably clear. “This is the kind of Gesha we love to select. It does not need to shout. David has been producing coffee for more than 20 years, working from a four-hectare farm in the Vereda of La Florida. His move toward more expressive varieties and higher-quality lots has made this Gesha a natural fit for our selection. In the cup, chamomile florals open gently, followed by ripe apricot, juicy tangerine and delicate stone fruit sweetness. A honey-like sweetness carries the coffee from start to finish, balanced by a bright citrus acidity. As it cools, the profile becomes more layered, with tea-like elegance, sweet cherry and a long stone fruit finish. The coffee was hand-picked at peak ripeness, floated to remove defects, de-pulped on the day of harvest and dry fermented for 30 hours before slow drying on raised beds.
