We have now worked with several harvests from David Berrio’s garden, La Casita, and his small-scale, intentional approach continues to inspire. This second pass is more refined than the first, with cleaner fruit expression and more articulated acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it.. In the cup we find a tropical-forward profile with vibrant clarity.
