This is our second year working with Faiber’s coffee. He is an exceptionally talented young producer growing an impressive array of varieties. In the cup we find a fruit-forward profile with excellent sweetness and acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it., and notes of strawberry jam, Key lime, and blackberry.
