This selection continues our exploration of Espírito Santo. José’s farm is located in a particularly cool and humid region, resulting in slower fruit maturation. In the cup, we find cacao, subtle citrus acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it., and a nice berry compote sweetness.
