Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. & Dried on Raised African Beds Rwanda Nyampinga Women's Cooperative - After being introduced to the Nyampinga Women’s Cooperative, from Southern Rwanda in Kigali back in 2014, we have been partners. In 2016 we offered the cooperative's first exportable crop at our cafes for the first time. A fledgling cooperative at the time, Nyampinga has grown into one of the model cooperatives in the country over twelve years later. Throughout the years as the cooperative's success has become more known throughout their community their numbers have increased, rising from around 100 producers at its founding to two hundred and thirty five members. Throughout our partnership, we have always offered the women’s washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. coffee, their only offering till this year. As the cooperative continues to grow and innovate, this year they produced their first naturally processed coffee and we are extremely proud to offer this incredible coffee in our lineup. After harvesting, instead of having the coffee cherry skin, fruit, and pectin washed from the coffee, the entire cherry is set out to dry in the sun on the drying table. The natural process can lend greater fruitiness and is less water intensive to process than their standard washed coffee. In our 10th year of working with Nyampinga we are pleased to offer this naturally processed coffee with notes of apricot, grapefruit, & green grape.
