Not every exceptional coffee needs to come from a single famous farm. El Rubí is a reminder that some of the most compelling coffees in Colombia today are being shaped by communities of producers working with the same ambition, discipline and understanding of quality. We selected this coffee because it shows what Planadas, Tolima can produce when careful smallholder farming is brought together with clear standards. It has the balance and openness we look for in a washed Colombian coffee: sweet, clean, expressive and easy to return to. In the cup, bright citrus and ripe stone fruit are layered with red berries and panela sweetness. The structure is juicy and transparent, with delicate florals, a silky texture and a long, refined finish. It is approachable, but not ordinary. There is a quiet precision here that speaks to both the region and the producers behind it. Planadas has become one of Colombia’s most interesting coffee areas, with high elevations, volcanic soils and a cool mountain climate that allow cherries to mature slowly and develop sweetness with clarity. This lot was produced by selected smallholder farmers at 2,000 meters above sea level and brings together Castillo, Caturra and Colombia varieties. The coffee is traditionally washed, preserving the bright character and clean expression that make this lot so attractive. El Rubí is not built around one name. It is built around shared quality.
