Adjacent to Piedra, Ciprés shares a similar microclimate, and is named after a small stand of cypress trees growing in the area. These trees can provide excellent shade, but also tend to dry out the soil, so we have limited their introduction to Sophia to areas where they do not interfere with coffee production. In this area the coffee trees have adapted and produce excellent quality despite, or perhaps because of, the stress of their thirsty neighbors. We were so lucky to visit this farm in 2024 guided by Kelly Hartmann. It is a beautiful farm, very high in altitude.
