A few hours after roasting, Joachim wrote the following notes about this coffee : When hot, it has a beautiful acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and it is very floral. When warm, you get some jasmine, violette, bergamote. When cold, remains a strong flavor of jasmine. It does not look like a farm but more a garden then a forest with coffee trees here and there. Unfortunately in 2020, a hurricane hit this area causing casualties and landslides. This farm means a lot ot us because tasting this cup had a huge impact on our coffee lives and showed us more than 10 years ago that coffee can have this flavors.
