This is a limited run microlotMicrolotA small, separately processed and traded parcel of coffee — often a single day's picking from one plot — kept apart because it's exceptional. coffee from the Finca La Esperanza, a farm situated high in the Central Andes at an elevation of 1800 m.a.s.l. The high altitude slows the maturation of the coffee cherries producing an incredibly sweet and vibrant coffee. Finca La Esperanza is a farm managed by Sedna Coffee, a producer focused on consistently high quality lots. Being a CaturraCaturraA natural dwarf mutation of Bourbon found in Brazil: compact plants, easier picking, bright and clean cup. A workhorse across Latin America. varietal, this is a naturally sweet and syrupy, with soft fruited notes. This particular lot was processed as a WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly., adding to its vibrancy and clean cup profile. In the cup you can expect notes of apple, spices and caramel, with a syrupy, sweet finish. Espresso recipe we are using: • Ground coffee weight: 19.3g • Beverage weight: 38-39g yield • Brew Ratio : 1:2 • Brew (extraction) time: 26-27 seconds • Water temperature: 92°C • RestingRoast date / restingSpecialty bags carry the roast date, not a best-before. Coffee needs days to degas CO₂ after roasting ('resting') and is typically best within weeks, not months. Period: Rested (27-35 days from roasting date) *Note: As each machine is different, start with an amount of coffee that comfortably fits in your basket. We are using VST 20gm baskets for our recipes. For example, if your portafilter fits 16g of coffee, you need to down dose it as per our recipe. Dose and distribute carefully using a scale capable of reading to an accuracy of 0,1g. Hot tips: Make sure the portafilter is hot when you start brewing. If it’s not, run some hot water through it to heat it up. The espresso shot should first come out as drips and be heavy and oily, and eventually become a steady stream. Please use your grinder setup to achieve the recommended brew time.
