Cultivada is an attempt to put some fairness and equity into our supply chains. The ICO reported that around 1/5 of the world’s coffee farmers are women, and up to 70% of the labor in the production of coffee is from women. However, representation and acknowledgement is sorely below these figures. Cultivada is a mark on our menu that will always represent coffee grown by women. VarietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. A major driver of cup character alongside origin and process. CastilloCastilloColombia's leaf-rust-resistant variety, bred by Cenicafé from Caturra and Timor hybrid. Long dismissed by purists, it now wins competitions when grown and processed well. Process Wet
