Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and versatile washed coffee from Sidama region, Ethiopia. The washing process highlights fruity and floral flavour notes. In 2006, brothers Asefa and Mulugeta Dukamo founded Daye Bensa, a coffee grower and exported in Ethiopia. Daye exports coffee from its farm, in the Shantawene Village, as well as from "out-growers" (or smallholdersSmallholderA farmer growing coffee on a small family plot — often under two hectares. Most of the world's coffee is grown this way, typically pooled at cooperatives or washing stations.) in three villages; Shantawene, Karamo and Bombe. Going forward, Daye is hoping to work with more farmers, to particularly encourage women farmers and to work with Hawassa University, to help students perform research too. The flavour notes we've selected from this coffee showcase sweetness juxtaposed with a light tang. We recommend pairing with: Berry Pavlova.
