Shantawene is located in the Sidama region of Ethiopia, known for its complex, floral and fruit-forward coffees. The diversity of micro-regions and heirloomHeirloom (Ethiopia)A catch-all label for Ethiopia's thousands of indigenous, largely uncatalogued coffee varieties — used when a lot's exact genetics are unknown. varietals in Ethiopia provide such a wide flavour potential from one country, and this coffee is the perfect example of this. This lot goes through a lesser-seen method in Ethiopia, being an AnaerobicAnaerobic fermentationCherries or depulped seeds ferment in sealed, oxygen-free tanks. Produces intense, unusual flavors — cinnamon, bubblegum, boozy fruit — that divide opinion. Naturally processed coffee, where ripe coffee cherries are placed in sealed, oxygen-free tanks to ferment in a controlled environment. The cherries are then dried on raised African beds, this is where the fermentation creates bright, fruity character in the final cup.
