This speciality coffee grows high up in the Andean mountains, where small coffee farmers cultivate it organically. Gran Palomar is the result of our open and friendly co-operation with small coffee farmers from Peru, which started since 2002. The coffee cherries are hand-picked from the coffee bushes, after which they are carefully washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. and sun-driedNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge.. Afterwards, the coffee is hand-roasted with passion at our small roastery, in a way that brings forth its nutty and chocolate-like flavour notes plentifully.
