WATERMELON | POMEGRANATE | JUICY West Guji has become one of Ethiopia's most celebrated coffee regions, known for producing naturals with an intensity and clarity that's hard to find elsewhere. This particular lot is processed using an anaerobic method. After a careful float selection, ripe cherries are sealed in airtight tanks and fermented slowly over seven days in temperature controlled water baths. The cherries then spend 30 days drying on raised African beds before a final four-week rest. In the cup: Ripe watermelon and pomegranate acidity with a juicy, fruit-forward finish.
