Character
The Don Sabino Micromill is a fourth generation family run coffee farm in Costa Rica’s West Valley that sits at the foot of the Poás Volcano where nutrient-rich soil and a cool, misty microclimate nurture exceptional Arabica coffees. The microclimate brings sunny mornings followed by cool and misty afternoons, creating an environment in which coffee thrives. The unique landscape contributes to the final cup characteristics of this coffee resulting in a clean, fruit-forward cup that reflects the region’s hallmark balance of acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and depth, shaped by volcanic soil, small-holder stewardship, and generations of craft.
