Established in 2010, the farm is known for its dedication to quality and research-driven innovation. With a unique dry-tropical climate, drip irrigation systems, and a robust genetic seed bank, Hacienda La Papaya produces high performance, first generation varieties that are disease resistant and nutrient efficient. This washed Sidra comes from Hacienda La Papaya, where producer Juan Peña and his team have been cultivating exclusive varieties with research-driven precision since 2010. The Sidra mother plants, established in 2013 and confirmed through genetic testing, yield cherries with exceptional potential when grown at altitude in the farm’s sandy-clay loam soil. After a 15-hour washed fermentation , the coffee is slowly dried under careful environmental control to highlight the variety’s clarity and balance.
