That means cooler air and slower growth. Slow growth leads to complex flavors. Fertile soil adds minerals and depth. Farmers hand-pick only ripe cherries. They sort them for consistency. The coffee is then washed clean. Then it is dried in the sun. In Ethiopia, many 'fair trade' models don't work. The coffee farms are too small to benefit from simply selling coffee at a fair price.
