Final roast of this coffee for this season was done specially for Amsterdam Coffee Festival on 1.04.2026 Bourbon coffee from Maria Belen Diaz in Acevedo, Huila, Colombia, is crafted with exceptional care. The process begins with the meticulous selection of ripe Pink Bourbon cherries, ensuring top-notch quality from the Los Pinos and La Primavera farms in Huila. The beans undergo a 24-hour pre-fermentation while still in cherry form, followed by a 36-hour anaerobic fermentation in bags. This unique process enhances the coffee’s flavor profile. After fermentation, the beans are dried on raised beds for 15 days to maintain optimal moisture levels. The semi-washed method used for this coffee results in a vibrant and complex flavor experience, featuring notes of pomegranate, green apple, and yellow flowers. Pink Bourbon coffee showcases the dedication and expertise in coffee processing, providing a distinctive and delightful tasting experience. This coffee is available in both espresso and filter varieties.
