Since we first started working together in 2016 his coffee has never failed to amaze. Finca La Miel (The HoneyHoney processThe skin is removed but some sticky fruit mucilage is left on during drying. Lands between washed and natural: more sweetness and body than washed, cleaner than natural.) is right next door to the La Cereza wet millWashing stationA central mill where many smallholder farmers deliver cherry for processing. In Ethiopia, Kenya, and Rwanda the station name (e.g. Idido) often identifies the coffee. and research centre which means Miguel has access to the best knowledge and facilities for processing his coffee. This lot was fermented as whole cherry in airtight barrels before being dried on raised beds as a naturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge.. Some at Proud Mary claim it’s their favourite coffee of the year.
