Tends to give clean, transparent cups where origin character shows clearly. High in the mountains of Querocoto, Peru, Don Calixto Perez carefully tends a one-hectare farm alongside his wife and three children. A founding member of the Rutas del Inca Cooperative since 2014, Calixto cultivates bourbon and caturra coffee varieties at an elevation where cool temperatures and slow cherry maturation create exceptional complexity in the cup. After harvest, Calixto employs a meticulous extended fermentation process, allowing the coffee to develop remarkable sweetness, clarity, and depth before drying on raised beds for nearly three weeks. During our visit to Rutas del Inca in September 2025, this lot stood out among more than 50 coffees we evaluated, earning a place in our lineup for its outstanding quality and vibrant character. The result is a beautifully expressive coffee bursting with notes of peach, maple syrup, and nectarine, balanced by a bright, lively acidity and a lingering sweetness that invites another sip.
