About the Process Aerobic Washed: This lot of Selection 9 Arabica from the Basari Mara Patte block at Kerehaklu Estate underwent a meticulously controlled culture-washed aerobic fermentation. Ripe, selectively harvested cherries were pulped and inoculated with a selected microbial culture before fermenting aerobically for 47 hours, allowing for precise flavor development and enhanced complexity. Following fermentation and thorough washing, the coffee was dried for 20 days in a polyhouse on raised beds. Throughout the drying period, the parchment was hand-raked every 30 minutes to ensure even moisture reduction and uniform drying, preserving clarity, sweetness, and the distinctive character of the lot. About the Roast Light Roast : At Subko, a light roast is one that is obtained by dropping the coffee lot at 186°-189°C. These roasts typically showcase a sensory profile that is delicate,floral and tea-like, and fruit-forward. In terms of the Agtron scale, Subko's definition of a light roast lies between the points 89 to 95, with 95 being the lightest version of a light roast. Cupper's Notes This light filter roast is built for clarity and lift, showcasing the aerobic washed character of the Kerehaklu Estate lot with bright, precise acidity.
