Whole beans from the farm Mi Finquita Chibor, in Panama. It is a geisha washed. A few hours after roasting, this coffee already stands out : When hot, it reveals a lot of floral notes : jasmine, violette, orange blossom, honeysuckle but also orange and blueberry When warm, it has still jasmine, violette but also chamomile and linden When cold, it tastes like a darjeeling or earl grey tea. People say that there is coffee flowing into this family’s vein. Driven by passion, they aim to keep improving the quality of their coffees. A great care is taken there. The beds are super clean. When we arrived Ratibor were literally the hands into the coffee cherries working on a specific fermentation. Photos taken by us at the farms.
