The Kalle Yellow Honey is distinct from our main Kalledevarapura offering because of its processing method. The Yellow Honey Process involves stripping the seeds from the coffee cherry and then allowing them to dry in the sun (thus the “yellow” designation) without any intermediary washing or wet fermentation stage. The effect renders a super smooth cup with concentrated chocolate, nut and spice flavors. This year’s harvest is remarkably complex and delicate and is reminiscent of the GeshaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. variety. The Kalle Yellow Honey is grown in the Western Ghat Mountains of southern India by D.M. Shankar and his family who own the Kalledevarapura Estate. Their complex approach to polyculture farming includes providing a dense shade canopy of silver oak, jack fruit and fig with companion planting in the understory of vanilla, cardamom, and pepper vines. The orchard is home to a broad diversity of fauna including Jungle Pigeon, owl, deer, fox and wild boar. Kalledevarapura dates back to 1865 when it was first established by the British. In 1950, the farm changed hands to Shankar and, under his directive, has made many changes regarding the coffee varieties planted there and the methods for growing and processing. The S-795 variety is now the primary cultivar at Kalledevarapura. S-795 was created in the 1940’s by crossing two older Indian varieties, Kents and S-288. The Kalle Yellow Honey has been shade grown in a polyculture forest farm environment and has been cultivated without the use of pesticides, herbicides or synthetic fertilizers.
