Founded in 2019 by Fabio Caballero Jr. and his grandfather, the legendary Fabio Caballero, La Salvaje was planted with seeds from their Cup of Excellence-winning Finca San Francisco. The farm now produces exceptional Java and GeshaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. varieties and serves as a haven for native wildlife, birds, and dense shade trees. Fabio Jr., a fifth-generation coffee producer, has fully immersed himself in specialty coffee and has gone on to produce multiple Cup of Excellence-winning lots. Together, the Caballeros continue a legacy of quality, innovation, and stewardship. Harvested by hand between February and May 2025, this gesha was picked by community members in San Isidro. After a 48-hour dry fermentation in covered barrels, the coffee was washed and slowly dried on shaded raised beds for 25–30 days before making its way to us.
