Jhon Wilmer Cuellar grew up in coffee. As a third-generation farmer in Acevedo, Huila, he carries forward a tradition that has shaped his family for years. For the past 15 years, he has been focused on cultivating coffee on his 10-hectare farm, Las Brisas, located at 1,500 meters above sea level. The work is familiar, but Jhon approaches it with curiosity, always looking for ways to improve while staying connected to what has been passed down to him. On the farm, Jhon works with both traditional and evolving processing methods, adjusting fermentation times and techniques depending on the varietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. He has developed a strong interest in exploring how different approaches can bring out new characteristics in the cup. That attention to detail carries through every step, from picking to processing to drying. His goal is simple but not easy, to bring out the best expression of each lot he produces. Las Brisas is also managed with long-term sustainability in mind. Jhon avoids synthetic pesticides and relies on organic materials like coffee husks and other farm inputs to nourish the soil. He grows banana and cachingo trees alongside his coffee to support biodiversity and strengthen the health of the land. For Jhon, the most rewarding part of the process is tasting the coffee at the end, seeing how each decision along the way shows up in the cup. It is a reflection of his work, his family, and the land he continues to care for each day.
