This limited release Pink Bourbon from Felipe Trujillo's Los Pinos farm in Antioquia, Colombia showcases expert fermentation processing that yields a bright, fruit-forward cup with notes of clementine, nectarine, and mango. Grown at 1,950 meters above sea level, the coffee undergoes a meticulous two-stage fermentation—first aerobic for 12 hours to develop fruity characteristics, then a week-long anaerobic process in sealed tanks—before drying on raised beds for 5–6 weeks and resting in GrainPro bags prior to milling. Trujillo, who left his CEO career to revive his family's farm La Ventola, has transformed the property into a specialty coffee hub by applying wine industry-inspired fermentation techniques and now mentors young farmers in the art and science of coffee processing.
