Tasting notes
Character
Roast Level: Light Flavor NotesTasting notesThe flavors a roaster perceives in the cup — 'jasmine, apricot, black tea'. Descriptive associations, not ingredients: nothing is added to the coffee.: Apricot, Caramel, Peach BodyBodyThe weight and texture of coffee in the mouth, from tea-like and delicate to syrupy and heavy. Driven by process, roast, variety, and brew method.: Syrupy AcidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it.: Bright Varietals: CaturraCaturraA natural dwarf mutation of Bourbon found in Brazil: compact plants, easier picking, bright and clean cup. A workhorse across Latin America. Processing Method: HoneyHoney processThe skin is removed but some sticky fruit mucilage is left on during drying. Lands between washed and natural: more sweetness and body than washed, cleaner than natural. High in the Nariño highlands of southwestern Colombia, the Inga community of Aponte has lived among these mountains for centuries. Historically a place of refuge, this volcanic landscape—rich with ash from the Galeras Volcano—now provides ideal conditions for cultivating exceptional coffee. This community-produced lot is honey processed, meaning each farmer depulps their ripe Caturra cherries while leaving the sticky fruit mucilage intact. The coffee is then slowly dried in solar dryers, allowing naturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. sugars to deepen and sweetness to shine. Once dried, the coffees are brought together to create this beautifully balanced community lot. We’re proud to offer this coffee for the seventh year in a row , and it continues to impress with its consistency and sweetness.
