Sweet, balanced, caramel-leaning; parent of countless modern cultivars. Process: WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. This month’s coffee takes us to Rutsiro, Rwanda, for a beautifully delicate but distinctive drinking experience. Grown by smallholderSmallholderA farmer growing coffee on a small family plot — often under two hectares. Most of the world's coffee is grown this way, typically pooled at cooperatives or washing stations. farmers on the hills surrounding Lake Kivu, this coffee benefits from the region’s high altitudes and rich volcanic soils, which contribute to its silky texture and fruity character. This coffee is a Red Bourbon varietal which is celebrated for its sweetness and complexity in the cup. Following harvest, the coffee undergoes a washed process, where the fruit is carefully removed through fermentation before the beans are dried on raised beds for 20–25 days.
