With the support of his family, his farm team and local partner Inconexus, Ricardo has built a reputation for thoughtful, improving work with every harvest. One hectare of the farm is set aside as forest reserve, leaving 6.5 hectares planted with traditional varieties (Castillo and Colombia) alongside exotic lots like Gesha and this Pink Bourbon. For this coffee, only ripe cherries were hand-picked. After density sorting, the cherries were washed and then dried slowly over 15 to 20 days — the careful approach that gives the cup its clean structure and candied fruit sweetness.
