Tasting Notes: Raspberry, peach, toffee. In The Cup Light in body and fruit-forward, this coffee produces a delicate cup with nuanced and clear flavors and aromatics. Raspberry and peach notes dominate the flavor profile, complemented by a juicy citric acidity. As it cools, the toffee-like sweetness becomes more apparent, balancing the bright fruit notes. On espresso, it's best pulled longer to tame the punchy acidity and give more clarity to the fruit notes. Origin Yirgacheffe is one of Ethiopia's most famous coffee-growing regions, known for tea-like coffees that express clear, crisp fruit notes. Yirgacheffe's coffees are the product of a warm tropical climate with moderate wet and dry seasons. Most coffee is shade-grown by small producers using organic practices. The region's coffees also benefit from high elevations, where specialty arabica thrives. The Producer Halo Beriti Washing Station was established in 2014 and serves approximately 750 smallholder producers in the surrounding catchment area. This particular lot is part of a "special preparation" in which hand-sorting was done repeatedly throughout the receiving and drying process, ensuring the highest possible quality.
