Tasting Notes: Citrus + Strawberry + Caramel Costa Rica is without comparison when it comes to coffee processing & micro-mill innovations—just ask Nelsyn Hernandez. She is dedicated to perfecting various processing techniques on her farms through her company she named Cafe Fatima. Honey processed coffees are complex methods of drying the coffee with the mucilage still attached to the seed, eliminating the need to wash the coffee which reduces environmental concerns. The result is an expressive & complex cup profile. Cherries are floated to remove any damaged coffee, then depulped & moved to patios to remove excess water while the mucilage remains attached to the bean. The beans are then mechanically dried to ensure moisture reduction stops at exactly eleven percent. Honey processing requires intensive, specialized labour & is time consuming—meticulous attention to detail is necessary to ensure the right amount of mucilage remains on the bean. This particular lot is from Nelsyn’s 37-acre farm Fatima located in Tarrazú de León Cortez. ROASTMASTER NOTES: I light-roasted this exceptional coffee to emphasize the intrinsic qualities of the red honey processing method. The first thing you notice before brewing is the floral & fruit-forward aroma of the freshly ground coffee. In the cup, expect vibrant berry notes balanced perfectly with bright citrus. As the coffee cools slightly, there is a burst of rich caramel on the finish.
