Region: El Chile, El Paraiso Process: Washed Roast: Medium Variety: Parainema Altitude (MASL): 3600– 4600 Notes: Chocolate, Almond Praline, Nectarine High in the hills of El Paraíso, lies the small remote farming community of El Chile which is home to a new wave of specialty coffee producers. The focus is on elevating quality through sustainable, hands-on cultivation. This lot comes from a collective of local farmers growing the Parainema varietal. Cultivated at high elevations and harvested with care, the cherries are brought down from the steep slopes and processed close to the farm, preserving clarity and character in the cup.
