In Ethiopia, Kenya, and Rwanda the station name (e.g. Idido) often identifies the coffee. is equipped with modern eco-pulpers and a multi-channel fermentation system that allows for precise control. After selective hand-picking, cherries are depulped within six hours of harvest and fermented for 24 to 36 hours depending on ambient temperature. The beans are then washed through three separate channels to remove any remaining mucilage before moving to raised drying beds, where they dry slowly over 10 to 14 days.
