This lot of Yellow Pacas comes from the Fincas Mierisch farm Santa Lucia in Honduras. Their Yellow Pacas variety is part of a natural regression of Pacamara, which is a cross between a Pacas and Maragogype. Historically, Pacas (either red or yellow) have done very well in Honduras Cup of Excellence competitions so the Mierisch team has maintained and continued to plant more each year. This lot underwent a honey process resulting in notes of meringue, orange and pineapple. There is quite limited supply of this one so expect it be be sold out fairly quickly! Fincas Mierisch has an esteemed tradition in producing high quality competition level coffees. In 2019 their washed Geisha won the 2019 Honduras Cup of Excellence and they have continued to produce amazing lots across many different varieties. With farms in both Honduras and Nicaragua, we are always excited to offer selections from both origins across many varieties including Geisha, Pacamara, H1, Pacas, Javanica and more!
