Region: Los Pozos, Renacimiento, Chiriquí Elevation: 1650 - 1900 masl About: Mi Finquita, which means “my small farm”, is a project started by Ratibor Hartmann Jr. and his wife, Tessie. Using their acquired skills and knowledge from running the famous Finca Hartmann, they help other farmers to produce and sell their coffees. The farms are located around the town of Los Pozos, Chiriqui and sit at an altitude of 1650-1900 masl. This is our first year purchasing from the Mi Finquita project, and we couldn’t go past their washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse.
