Paramount is our carefully developed answer to a darker roasting profile – rich, smooth, and full of character. It shines as espresso with a depth of flavour that holds its own in milk-based drinks, but don't overlook it as a filter brew either. For those who enjoy something with a bit more weight and depth in the cup, it delivers. 80% Brazil: Selvatech, PeaberryPeaberryA cherry that grows one round seed instead of the usual two flat-sided ones. Sorted and sold separately; some claim it cups brighter and more concentrated., NaturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. 20% Costa Rica: Atenas, WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. The dark sweetness of toffee and a dusting of cacao nibs up front, finishing long on dark chocolate . Full-bodied and satisfying – the kind of cup that earns its place in a morning routine. Roast Information Dark With an extended development time, this coffee is taken gently to the edge of second crackFirst crackThe audible pop when steam pressure fractures the bean during roasting (~196°C). Light roasts are dropped shortly after it; dark roasts continue toward a second crack. – deepening the bodyBodyThe weight and texture of coffee in the mouth, from tea-like and delicate to syrupy and heavy. Brew Recipe Recommended Brew Recipe Dose: 17g Time: 25 – 30 secs Yield: 34g (we recommend this as a starting point that we enjoy, tweak to personal taste) RestingRoast date / restingSpecialty bags carry the roast date, not a best-before. Coffee needs days to degas CO₂ after roasting ('resting') and is typically best within weeks, not months. Recommendation We recommend a minimum 7-day rest after the date of roasting before brewing this coffee as espresso, but there's a lot of personal preference in that. So, by all means, please brew whenever you like!
